My brother stayed with us unexpectedly last week, so I had the pleasure of feeding a teenage boy. A teenage boy that likes meat. A lot. We didn’t have leftovers like I thought we would, so I had to make a couple extra meals that weren’t in my original meal plan. Both meals were inspired by other MPM‘ers and they were deilcious! Definite keepers. In addition to the meals I posted last week, we also had Lasagna Ciabattas and Apple Meatballs. I ended up making the meatballs a little bit differently than the linked recipe, but essentially used the same ingredients. Great meatballs! Chris even ate them and he’s not a meatball fan.

Sunday- Pancakes & Egg Scrambles
Monday- Roast Chicken, Mashed Potatoes & Corn
Tuesday- Szechuan Chicken Salad (using leftover chicken)
Thursday- leftover pork chops
Friday- Grilled Fish & Veggie Packets & Cous Cous
Saturday- dinner w/ family
