Cous Cous w/ Tomato & Cucumber

This was a yummy accompaniment to the chicken tikka we had a bit ago.  It was easy to make and I just threw stuff in that I thought would go well with the flavors in the chicken.  It was so tasty, I couldn’t help but take a couple of servings.  🙂

    Cous Cous w/ Tomato & Cucumber

    1 c water
    1 T olive oil
    1 c cous cous
    2 small tomatoes, diced
    1 cucumber, seeded & diced
    1/4 c cilantro, roughly chopped
    2 -3 T lemon juice
    salt & pepper to taste

    1. Pour the water and olive oil into a medium sized bowl. Microwave on high for about 1 – 2 minutes until the water is boiling. Add the cous cous, stir and set aside for about 5 minutes.
    2. Chop your veggies while you wait for the cous cous to absorb the water. Fluff the cous cous with a fork. Add the tomatoes, cucumber, cilantro and toss to combine. Pour the lemon juice over the cous cous mixture and season with salt and pepper. Mix to combine and adjust seasonings if necessary.

You can serve this immediately if you want, but I let mine sit at room temperature for about 15 – 20 minutes to let the flavors mix.

  1. I don’t use cous cous nearly enough. This would be a great side dish with so many things!
