CC: Lemon Ricotta Cookies

I haven’t posted a Cookie Carnival goodie in a really long time.  Not to say that I haven’t made any since February.  I loved the Toasted Almond Lemon bars (which I made 3 times actually).  I also enjoyed the Strawberry Shortcake cookies from last month.  Truth be told- I’m just too lazy to post them.

I’m not sure what has motivated me to post these particular cookies.  Maybe it’s the fact that I haven’t posted anything to my blog in over a month.  Perhaps it’s because I actually made them at the beginning of the month rather than the last day of the month.  Whatever the reason, these are yummy!  I love all things lemon.  And these are no exception.  They’re not really what I consider a traditional cookie.  They’re more like a tiny cake in my opinion.  I loved the richness that the ricotta added to the cookie.  I tried the glaze and didn’t really like it.  I preferred them plain or with a light dusting of powdered sugar.

CC: Chocolate Fudge Cookies with Dried Cherries

First off, I have to say that these are hands down my favorite cookie of all the ones I’ve made since joining in on the fun last summer. Secondly, these are the Cookie Carnival cookies for February. Um, yeah…I’m a tad late. Alright, a lot late, but these are so good I had to post them anyway. They’re perfectly fudgy and the dried cherries add a sweet and sour flavor. That doesn’t sound very appetizing, but let me tell you- it’s delicious! I think this is a great basic cookie dough that you could add anything you like to and it would be great.


I’m also going to be lazy and just give you the link for the recipe. So here you go. Make them. They’re fantastic!

CC: Mini Chocolate, er I mean, Pumpkin Whoopie Pies

I was really excited when I read the title for this month’s cookie. Then I read the recipe and my excitement deflated. I was imagining a spiced pumpkin cookie with a cream cheese filling. Well, there is cream cheese in the middle, but there is no spiced pumpkin cookie here. These whoopie pies are chocolate with a pumpkin cream cheese filling. The chocolate in the cookie is so overwhelming though that I can hardly taste the pumpkin in the filling. Maybe my filling to cookie ratio is off? But as you can see, the filling oozes quite a bit.

I also thought the cookie was a bit dry. Eating these was certainly exercise for my mouth. If I make these again, I think I’ll cut the amount of cocoa in the cookie. I do enjoy the chocolate/pumpkin combination a lot. I love chocolate chip pumpkin cookies and I made some chocolate pumpkin cupcakes a bit ago, but there was no balance in this. Too much chocolate (I can’t believe I’m saying that) and not enough pumpkin.

CC: Grapefruit Cookie?

This month’s cookie for the carnival is Pink Grapefruit Sandwich Cookies.  I will admit that I let out an audible, “Ewww!” when I read that.  I’m not sure why.  I enjoy grapefruit and I love citrus flavored cookies.  I guess I just never thought to put grapefruit and cookie together in the same recipe.

Kate provided the link to the recipe on Martha’s website.  I clicked through and saw there was a video.  If there’s a demonstration of how to do something, I usually watch it to make sure I don’t flub.  I don’t know who Kristin Chenoweth is, but I was seriously amazed when I saw her in the video clip.  It looked like she was wearing 3 inch heels AND she was standing on an apple box.  AND she was still only about the same height as Martha.  So I googled her.  She is only 4’11.” 

Now lest you think I am making fun of her, I am not.  I am 4’11.”  I’ve just never seen an actress that short.  I thought, “Wow!  An actress shorter than 5 feet!  Cool!”  Then I thought, “Do I really look that short?”  Followed by, “Gee.  Martha must be tall.”  Anyway, power to the vertically challenged!  I’ve stood on many an apple box in my lifetime as well.  😀

Anywho, back to the cookies.  My oven was a bit hot and my dough too warm I think.  The cookies spread out almost paper thin and browned way too quickly.  The filling was also a little on the buttery and sweet side for me.  I think I would have liked it better if I had put some of the grapefruit zest in the filling.  Cream cheese in the filling sounds good too.  For some that might be too tangy, but I like tangy.  😉 Overall, they were an okay cookie, but not something I’d beat the doors down for.

No cookies this month…

I was too busy with family and traveling last month to get the chocolate hazelnut biscotti done, but check out all the other cookies at the clean plate club. Yum! Hopefully I’ll be able to make these sometime in the near future.
