Last week was a very good week. I didn’t have to cook much and everything I did make was dee-licious!
Unfortunately I didn’t get pics of the salmon, but the marinade was great! So much flavor for so little marinating time. This marinade would be a good one for any kind of meat I think- as long as you like ginger. The parm bundles were yummy, but I liked the filling better as pizza topping. Less of a hassle. And I would have to say that the Greek Grilled Chicken w/ the cous cous salad was my favorite meal of the week. A post on that meal soon to follow.

Sunday- Blueberry Muffins & Spinach Cheese Scrambles
Monday- Garden Stuffed Baked Potatoes & Grilled Cheese
Tuesday- Tostadas Salsa Verde & Black Bean Salad
Wednesday- leftover tostadas
Thursday- Pork & Seafood Fried Rice
Friday- BBQ w/ friends
Saturday- leftover fried rice
