I love chicken wellington and when I saw a recipe for salmon wellington, I instantly bookmarked it. The recipe wasn’t really precise which was fine with me. I just used it as a guideline. This was a very quick, simple and tasty dinner. I served it with baked potatoes and roasted asparagus. Mmm mmm good! 😀

Salmon with Cucumber Dill Sauce
This was a delicious and quick dinner. I made the cucumber sauce earlier in the day so that the flavors had a chance to intensify. I know I went a little overboard ladling the sauce over my salmon, but it was so good that I couldn’t resist! This is a great meal to keep in mind for busy days (you do have to salt and drain the cucumber for an hour, but you could easily set that up and go do something else for a bit).

Spinach & Feta Salmon Bake
I’m obsessed with finding seafood recipes that my husband will eat. This one sounded interesting and different than the normal “marinade and bake” deal. My hubby does not enjoy feta cheese however, but I thought I could still make this work.
The blog I found this on called this a spinach and feta salmon bake, but the spinach seemed to be missing in her photo. I don’t know that I would have liked it without the spinach. My fillets were a little small so the cheese layer ended up pretty thick. Next time, I think I’ll only use 1/2 c of feta. Overall, it was pretty good. Salmon smothered with spinach dip. Yum! 🙂
